I am going to define "flying the airplane" as using the flight controls to control the plane. I am going to define "approach and landing sequence" and more partiuclar landing to be the point at which plane is off the runway. During taxi, the flight controls are used to "fly" the plane ensuring that the wind doesn't pick up a wing. So "flying" continues even while on the ground in my definition. So that brings me to the other part of the question which is at what point is the landing over, which I am going to say is at the point that the plane exits the runway. So even though you may be flying the plane after exiting the runway, you are no longer in a landing sequence.
